These flavor-studded fries take the parsnips you used to think were bland and kick them into high gear — meaning lower-cal fries with the same roasted crispiness you crave.

Za’atar-Spiced Parsnip Fries with Spicy Hummus

5 to 6 parsnips
Olive oil
1 tablespoon chopped fresh oregano
1 tablespoon sumac
1 tablespoon ground cumin
1 tablespoon sesame seeds
1 teaspoon kosher salt
1 teaspoon ground black pepper

Preheat oven to 400 degrees Fahrenheit. Stir together homemade za’atar ingredients (or use a store-bought blend) — oregano, sumac, cumin, sesame seeds, salt, and pepper. Scrub parsnips clean and slice into chunky wedges. Toss parsnips with olive oil and spice blend and spread on a parchment-lined baking sheet. Bake until golden brown, shaking and tossing pan halfway, about 20 to 25 minutes. Serve hot with Spicy Hummus for dipping.
