Mini Zucchini Pizzas: 3 Ways
2 large zucchini squash, sliced in 1/2 inch rounds
1/2 cup marinara sauce
4 oz., mozzarella cheese
1 yellow squash
2 oz., pesto
2 cups, cherry tomatoes
1 cup, pepperoni
1/4 cup finely grated parmesan cheese
fresh oregano for topping
1 container CAVA Harissa
1 container CAVA Crazy Feta
1 container CAVA Tzatziki
Slice zucchini into 1/2 inch rounds and place the rounds on a cookie sheet. For a third of the mini zucchini pizzas, mix equal parts Harissa to marinara sauce and spread on rounds; add mozzarella cheese and diced yellow squash on top. For another third of the mini zucchini pizzas, spread Tzatziki, swirl pesto, and add halved cherry tomatoes on top of the rounds. For the last third of the mini zucchini pizzas, spread Crazy Feta and add quartered cherry tomatoes and pepperoni on top of rounds. Bake all of the rounds for 15 to 20 minutes at 375 degrees. Top mini zucchini pizzas with fresh oregano and parmesan. Enjoy!
