For the Cava team, wellness — whether that means walking to work each day, or choosing an extra scoop of black lentils, or lifting for an extra 15 minutes one day a week — is important. Each and every one of our employees takes an extra step, whether through their dietary choices or through their workout routines — or through those hours they spend chasing their toddler around every evening.
So we sought to celebrate and enhance that outlook this summer with a series of monthly challenges. Our Cava team members raised the bar in their daily steps, in their daily active minutes, in their inventive meal creation, and we wanted to showcase the results. This recipe comes to you directly from one of our team members, Brian Seidel, the General Manager of our upcoming McLean location. Now let’s dig in!
Lemon and Dill Salmon Burgers with Avocado Tzatziki
For the burgers:
1 ½ lb. skinless and boneless salmon
¼ cup fresh dill, chopped
¼ cup lemon juice
1 teaspoon Dijon mustard
1 teaspoon garlic powder
½ cup minced red onion
1 teaspoon salt
½ teaspoon pepper
¼ cup Cava Tzatziki
2 tablespoons flour
For the Tzatziki:
8 oz. Cava Tzatziki
2 teaspoons lemon juice
1 ripe avocado
Pulse half of the salmon in a food processor until minced. Dice the other half and place both in a medium mixing bowl together. Add all other ingredients and mix. Form four 6-oz patties. Heat up ¼ cup olive oil in a pan and pan-sear the salmon burgers for 5 minutes on each side, until golden on the outside. For the avocado spread, mash one avocado into the Tzatziki, and add the lemon juice. Stir or whisk together until creamy. Serve burgers on a bed of spinach or a brioche bun. Top with avocado tzatziki and a sprinkle of dill.
