You’ve dunked your fair share of pita chips into hummus. And you’ve certainly had a few classic Greek salads over the years. But have you had both? At the same time?
[Ok, so maybe you have if you’ve ever eaten at CAVA. But that’s not the same.]
This is your classic, brine-y village salad with fresh crumbled feta – and it’s ON your hummus. It’s the all-in-one lunch you never knew you needed.
Traditional Hummus Instant Snack Break
Prep Time: 10-15 minutes
Yield: 2-3 snacktimes (if you’re lucky)
1 cup cherry tomatoes, quartered
3 Persian cucumbers, halved and large-diced
2 tablespoons finely chopped red onion
4-6 pickled banana peppers, thinly sliced
1/3 cup crumbled feta
2 tablespoons olive oil
juice of 1/4 a lemon
1 tablespoon fresh mint, roughly chopped
1 tablespoon fresh parsley, roughly chopped
1 package CAVA Traditional Hummus
Chop the tomatoes, cucumbers, red onion, and banana peppers, and place in a medium bowl. Crumble some fresh feta over top, and sprinkle with fresh mint and parsley. Drizzle with olive oil and a squeeze of lemon. Lightly toss everything together with a spoon or your hands.
To assemble your snack break, add a few heaping spoonfuls of village salad into your hummus container. Replace the lid and head out the door.
Dip using pretzel crisps, pita chips, or your preferred dipper.
