Greet the day, then fuel it. Wrap up a morning (or any time of day, really) meal that packs protein, flavor, and some major #eggporn.
Healthy Hummus and Kale Breakfast Tostadas (makes 2)
1 small bundle lacinato kale
1 shallot, minced
1/2 cup cherry tomatoes, halved
red pepper flakes
1 container CAVA Traditional Hummus
salt to taste
Remove stems from kale and roughly chop greens. Heat a swirl of olive oil in a medium skillet over medium heat. Sauté shallot for 1 to 2 minutes, then add tomatoes, kale, and a generous sprinkle of salt. Cook until kale has softened, 6 to 7 minutes.
In the meantime, prepare two fried or poached eggs.
Warm a small skillet over high heat. Toast your tortillas until golden, about 20 seconds per side.
Spread Traditional Hummus on each tortilla. Top with kale mixture, then an egg and a sprinkle of red pepper flakes and salt.
