The busyness of back-to-school season means finding the easiest kid-friendly recipes out there. We chatted with superdad Edgar, Area Leader in our Austin region, to hear what he likes to cook up with his kids. His recommendation: Hummus Avocado Quesadillas.

Three of my daughter’s favorite things – Hummus, cheese, and avocado – make this mini quesadilla a winner.

Hummus Avocado Quesadillas

2 large wheat mini tortillas
1 cup shredded mozzarella
1 avocado
1/4 cup thinly sliced scallions
1/4 cup queso fresco
Paprika
1 container CAVA Traditional Hummus

Spread hummus on one side of the tortilla, then add a few thin slices of avocado and a sprinkle of shredded mozzarella. Fold tortilla in half to create a quesadilla.

Heat a large nonstick pan to medium-high. Brush pan with a little olive oil, then add two quesadillas to the pan side by side and toast until the cheese has melted and the bottom is golden brown. Carefully flip both quesadillas to allow a few more minutes for the other sides to crisp up.

Remove from heat and use a knife or a pizza cutter to portion into 3-4 wedges. Top with a sprinkle of queso fresco, a pinch of paprika, and sliced scallions for garnish.

Hummus Quesadillas
