Harissa Shrimp Fried Rice in a Pineapple Half

1 pineapple, cut in half
1 ½ cups, brown rice
1 tsp., olive oil
1 ¼ lbs., shrimp (shelled and deveined)
2 cloves, garlic
5 large scallions
1 eggplant
1 cucumber
1 red pepper
Cilantro for garnish
1 container CAVA Harissa

Cut pineapple in half and hollow out both halves to make two bowls. Also, cut a piece off the bottom of the pineapple halves to create a flat base. Sauté shrimp in Harissa and olive oil until pink, set aside. In the same pan, cook garlic and scallions for a minute, and then add red peppers and eggplant and cook for one minute. Next, add pineapple and cucumber to the pan and cook for one minute. Add shrimp in and the cooked brown rice. After cooking for one minute, add Harissa Shrimp Fried Rice to pineapple halves. Top with cilantro and enjoy!
