Harissa-Roasted Carrot Toast with a Fried Egg 

3-4 medium carrots
olive oil
1 lemon
1 egg
Your preferred toast
1 container CAVA Harissa

Whisk Harissa with 1 to 2 tablespoons of olive oil. Cut carrots to 1/4-inch pieces and toss with Harissa mixture. Roast carrots in a small skillet at medium heat for 12 to 14 minutes (cover with lid to shorten cooking time). Toss carrots with lemon juice, olive oil, and salt. Top toast with carrot mixture and finish with a poached or fried egg.
