You know how this works: Charred corn, mayo-y + spicy sauce fresh cotija crumbles… or at least you thought you knew how this worked.

This is the new elote. The [healthier] elote toast you’ve been waiting for.

Greek Elote Toast with Spicy Hummus

4 ears fresh yellow corn 
2 limes 
Crumbled feta 
Pinch of chili powder 
Pinch of cumin 
1 tablespoon fresh rough-chopped cilantro  
Your preferred bread
1 package CAVA Spicy Hummus

Peel back the corn husk and desilk the corn, leaving the leaves on to use as your handle. Bring your grill to medium-high heat. Lightly brush corn with a little vegetable oil to improve grill coloring. Place ears of corn on the grill. Heat through for 8-10 minutes, turning every 2 minutes to ensure even coverage. Remove corn from the grill and cut kernels off of the cobs. You can also execute this recipe using a hot cast-iron skillet on your stovetop.

Spread Spicy Hummus on toasted bread and top with grilled corn, crumbled feta, and a few pinches each of chili powder and cumin. Sprinkle with cilantro if desired, and finish with a squeeze of fresh lime juice.
