Enter Crazy Feta.
Crazy Feta Watermelon Gazpacho with Diced Apricot and Cucumber
1 medium watermelon
2 cucumbers, diced
1 white onion, chopped
1 small clove of garlic
2 teaspoons kosher salt
1/2 teaspoon fresh cracked pepper
1 teaspoon honey
1 jalapeño, de-seeded and minced
1 serrano chile, de-seeded and minced
2 apricots, diced
extra cucumber, for garnish
1 container CAVA Crazy Feta
Remove watermelon rind and cut into large chunks. Pulse watermelon chunks in a blender until smooth. Add cucumber, onion, garlic, salt, pepper, honey, jalapeño, 2 tablespoons Crazy Feta, and lime juice. Pulse whole blend together until smooth. Taste and adjust seasoning to your preferences. Serve topped with fresh apricot, cucumber, and an extra dollop of Crazy Feta as desired.
