Crazy Feta, Spinach, and Potato Waffles
4 large eggs
2 tbsp. olive oil
Baby spinach, finely chopped
1 large potato
3 spring onions (scallions), finely chopped
1 tbsp. finely chopped flat leaf parsley
1 tsp. finely chopped dill
1 container CAVA Crazy Feta
1 container CAVA Tzatziki
Pre-dice and boil the potato and set aside. In a large bowl, whisk eggs, salt, and olive oil. Sift the flour and baking powder over the bowl and then mix together until batter is smooth. Add in the Crazy Feta, potato, spring onion, spinach, and herbs. Place Crazy Feta batter in waffle maker and cook until golden. Top with scallions, dill, and a fried egg. Serve with Tzatziki as a dip. Enjoy!
