Crazy Feta, Corn, White Bean Tortilla Scoops
1 eight-ounce package cream cheese, softened
1 bag frozen corn or 3 ears fresh corn, blanched and cut from the cob
1 can white beans, drained and rinsed
1 package pepper-jack cheese
1 bag tortilla scoops
1 container CAVA Crazy Feta
1 bundle chives, for topping
Salt and pepper to taste
Preheat oven to 350 degrees Fahrenheit. Mix Crazy Feta, cream cheese, corn, white beans, and egg in a bowl. Put a spoonful of your Crazy Feta-corn mixture into each tortilla scoop. Top with a sprinkle of grated pepper-jack cheese. Bake for about 20 minutes, until cheese is browned. Top with a sprinkle of paprika and chopped chives.
